On Monday 9/11, the Port Press celebrated our first meeting of the school year! To commemorate this special occasion, I baked Strawberry Shortcake Cupcakes which were loved by all who tried them.
This recipe was created by Allison, better known as Celebrating Sweets. It includes a dense vanilla cupcake that resembles the texture of an angel food cake. Inside, there was strawberry filling, which was the perfect balance between the slightly tart strawberries and the sweet jam. On top, there was smooth cream cheese frosting with more strawberry filling to garnish.
The reviews are in: the cupcakes had an average rating of 9.55 out of 10 (Personally, I would give them an 11 out of 10, but I’m a bit biased…)!
Sophia Angelo gave the cupcakes a 9.2/10, stating that the only reason that they weren’t a 10/10 was because she never gives anything a 10/10! Her only critique was that there should have been more icing and strawberries, but other than that, they were delicious!
Noelle Oppedisano said that the cakes were really good and gave them a 9/10, while Josh Fields said the same thing but gave a rating of 10/10.
Willow DeBlasi also gave them a 10/10, with reasoning that they were really good and that I did a great job with them.
Overall, these cupcakes were delicious and everyone enjoyed them immensely. They were definitely a great start to another successful year of the Port Press. Even though they were delicious, I don’t think that I would make these cupcakes again because they were a lot of work. I had to dice 2 ½ cups of strawberries, which took me 30 minutes alone. Also, I need to work on my piping skills, as the decorating was sub-par. I would recommend making these cupcakes, you just have to know what you’re getting into.
